Could anyone please explain to me how to set minim server to transcode DFF and DSF files to Dop so I can send it over SPDIF? If this is even possible.

You need to install MinimStreamer to do this. Please see the MinimStreamer website for details of how to install and configure MinimStreamer to do this transcoding.
