MinimServer 2 in Docker - best approach for persistent config?

The instructions I posted should work without using a QNAP NAS. This was just an example. You will need to adapt them to match how you download the MinimServer Linux archive file for the update.

I am planning to create a "latest" version of the Docker Hub download. There is no /opt/minimserver/config folder. Perhaps you meant /opt/minimserver/data. I think my suggestion of preserving the container across a version update is better than doing this because it also preserves the license activation.
