I hadn't set anything special in the previous version so simply removed the folders for the two instances I had running, unzipped the archive, ran setup and away we went. My second instance was for mp3 files, but I'm not fussed about that so it can wait until I have time to fiddle about

To create a second instance, you should be able to make a new directory underneath /home/pi, unpack the MinimServer archive into this directory, then follow the normal installation instructions. However, there are likely to be problems if you enable desktop integration or automatic startup for the second instance. I'll think about how to handle this.
